Spicy Rice Cakes (Tteokbokki) Recipe
Ingredients:
1 lb (450g) Korean rice cakes (tteok)
2 cups (480ml) water or broth (anchovy, kelp, chicken, or vegetable)
3 tbsp gochujang (Korean red pepper paste)
1 tbsp gochugaru (Korean red pepper flakes)
2 tbsp soy sauce
1 tbsp sugar
1 tbsp sesame oil
2-3 garlic cloves, minced
1 cup fish cakes (eomuk), sliced
1 cup cabbage, chopped
1 green onion, sliced
Optional: boiled eggs, mozzarella cheese, ramen noodles
Instructions:
Prepare Rice Cakes: If using frozen rice cakes, soak them in warm water for about 30 minutes to soften. Drain and set aside.
Make the Sauce: In a large pan, combine water or broth, gochujang, gochugaru, soy sauce, sugar, sesame oil, and minced garlic. Stir well until the gochujang is fully dissolved.
Cook the Rice Cakes: Add the rice cakes to the pan and bring the mixture to a boil. Reduce the heat to medium and let it simmer for about 10-15 minutes, stirring occasionally, until the sauce thickens and the rice cakes become chewy.
Add Vegetables and Fish Cakes: Add the sliced fish cakes, chopped cabbage, and green onion to the pan. Continue to cook for another 5-7 minutes until the vegetables are tender.
Optional Additions: If desired, add boiled eggs, mozzarella cheese, or ramen noodles to make the dish more filling. Allow the cheese to melt before serving.
